NY-Style Roast Beef
Deli Classic | Cook 90 min + overnight rest | Medium
Peppery, juicy beef loaf inspired by the New York deli counter. Stack it high on rye with horseradish cream.
Ingredients:
- 2 lbs beef round or sirloin
- 1 tbsp coarse black pepper
- ½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp Worcestershire sauce
- 1 tbsp olive oil
Instructions:
- Cut beef into chunks. Add to blender with all spices, Worcestershire, and olive oil.
- Blend until smooth and uniform.
- Refrigerate the mixture overnight for deepest flavor.
- Slide a cooking bag into the press. Fill with the mixture, pack firmly, seal.
- Cook in boiling water for at least 90 minutes to 165°F.
- Leave the sealed press in the fridge overnight. Remove from bag the next day and slice paper-thin.
Note: Use the included slicer for deli-counter thin cuts. Pairs perfectly with Swiss and spicy brown mustard on rye.
